Elisa is a gluten free vegan traveller, an IFSTAL Food Systems Scholar and the founder of the community What Gluten Free Vegans Eat, supporting people with coeliac disease in choosing a plant-based diet. After opening the first gluten free travel blog in Italy, she went vegan in 2019 and started exploring more sustainable ways of exploring the world by protecting local ecosystems and connecting with indigenous cultures.
