Sainsbury's Try Team
Mushroom Stroganoff - gluten, wheat & dairy free
Serves 2
Ingredients
2 x 15 ml spoons Merchant Gourmet dried porcini mushrooms, torn into small pieces
1 x 15ml spoon olive oil
1 small onion, finely chopped
3 celery sticks, finely chopped
1 clove garlic, crushed
1 x 5ml spoon paprika
250g Sainsbury’s large flat mushrooms, sliced into finger-thickness strips
150g Sainsbury’s baby button mushrooms, washed and left whole
2 x 15ml spoons brandy,(optional)
150ml Alpro soya dairy free alternative to single cream
2 x 5ml spoons gluten free Sanchi Organic Tamari soy sauce
Freshly ground black pepper
1 x 5ml spoon lemon juice
1 x 15ml spoon chopped fresh thyme and parsley (optional)
Method
• Place the dried porcini mushrooms in a small bowl, cover with boiling water and leave to soak for 30 minutes.
• Meanwhile, heat the oil and gently sauté the onion, celery and garlic until softened and translucent. Stir in the paprika and cook for a further 30 seconds.
• Add the fresh mushrooms, cook for a further minute then add the brandy. Continue to cook until the mushrooms begin to soften.
• Add the porcini mushrooms with their soaking liquid. Bring to the boil, lower the heat and simmer for 2-3 minutes.
• Stir in the soya alternative to cream, and heat through. Add Tamari, pepper, fresh thyme and lemon juice to taste.
• Garnish with chopped parley.
