FreeFrom Fruity Flapjack

Ingredients

50g Sainsbury’s FreeFrom vegetable fat spread
75g soft brown sugar
150g marshmallows (check the label, some have additives)
320g ready to eat apricots, cut into thin strips
225g Sainsbury’s FreeFrom pure oats

Method
•    Preheat the oven to 190ºC, fan 170ºC, Gas Mark 5
•    Line a 20cm square tin with baking parchment.
•    Put the vegetable spread, sugar and marshmallows into a saucepan and place over a low heat to soften.
•    Stir to combine and then add the apricots. Bring to the boil, then reduce the heat and simmer for 5 minutes.
•    Take the pan off the heat and stir in the FreeFrom pure oats. Pour the mixture into the lined tin and bake in the preheated oven for 10-12 minutes until golden brown.
•    Remove from the oven and allow to cool slightly before cutting into bars.
